Yes. Each guest is assigned their own bed and sleeping space within the shared dorm.

Our two dorm rooms are mixed. We try to keep female guests in one dorm and male guests in the other, but because we only have two dorms with six beds each, this is not always possible.

Yes. Private guest rooms can be securely locked. Dorm rooms cannot be individually locked, but hostel staff take reasonable measures to ensure guest safety. The hostel's front door is locked at night.
